Quick Overview

Target hop is by far the mostly grown hop in Britain due to its excellent resistance to disease & its very high alpha acid content. Although recognised by some brewers as an aroma hop, Target is at its best in the copper for the production of beers with a low bitterness.  Use for all British beers.

Hops are generally divided into three categories:

BITTERING HOPS
- are high in alpha acids which provide bitterness
- do not usually impart much flavour or aroma but do have their own characteristic bitterness
- are usually added to the boil for at least one hour

AROMA HOPS
- are used to enhance the flavour and bouquet of the beer
- are usually low in alpha acids but high in essential oils
- can be added to the wort about 10 minutes before the end of the boil
- can be added to the wort after boiling to allow the hop aroma to infuse
- can be used for ‘dry hopping’, which involves adding hops to the beer after it has finished fermenting, e.g. in the keg
- are suitable for heavily hopped beers to avoid generating too much bitterness
- ideally, only the freshest, highest quality hops should be used

DUAL PURPOSE HOPS
- high in alpha acids and can impart a pleasant aroma
- can be used in the boil and as late addition hops
- are not usually suitable for dry
