Phoenix Hops

Phoenix hops were bred as a replacement for Challenger and therefore it is a true dual purpose hop with bittering and aroma”. It is best used early in the boil. It has an understated spicy aroma with floral notes and descriptions of chocolate, pina and molasses. Beer Styles: English Ales including porters, stouts, ESBs, and bitters.

Hops are generally divided into three categories:

BITTERING HOPS
- are high in alpha acids which provide bitterness
- do not usually impart much flavour or aroma but do have their own characteristic bitterness
- are usually added to the boil for at least one hour

AROMA HOPS
- are used to enhance the flavour and bouquet of the beer
- are usually low in alpha acids but high in essential oils
- can be added to the wort about 10 minutes before the end of the boil
- can be added to the wort after boiling to allow the hop aroma to infuse
- can be used for ‘dry hopping’, which involves adding hops to the beer after it has finished fermenting, e.g. in the keg
- are suitable for heavily hopped beers to avoid generating too much bitterness
- ideally, only the freshest, highest quality hops should be used

DUAL PURPOSE HOPS
- high in alpha acids and can impart a pleasant aroma
- can be used in the boil and as late addition hops
- are not usually suitable for dry hopping
